Hello, Healthy Heyday peeps! I have some very exciting news to share with you. There is (Living) Light at the end of the tunnel, for me! Starting June 11th for next 3 weeks I will be attending the Living Light Culinary Institute to become a Certified Associate Raw Food Chef and Instructor! This has been a dream ever since I went “raw” in 2009. I can’t believe that one of my top five contenders will be gleefully scratched off my bucket list! 
Just days away, I will be embarking on a dream come true. My heart is so full and I am so giddy just thinking about it!!! This feeling of lightness, not to be confused with feeling lightheaded (after all, I am blonde ), is so exhilarating!
For the next 3 weeks I will be “drinking in” and acquiring the skills on how to transform plain raw foods into a revolutionary new culinary art, learning from the mother of gourmet, raw cuisine herself – Cherie Soria. Not to mention, her top notch staff of highly accredited chefs. And in turn, I will be able to create fabulous raw food dishes and share them with all of you! Can you stand it? I can’t!
My 10+ hour journey up the coast to Fort Bragg, CA will give me lots of time to think, contemplate and soak up and take in some longtime missed scenery. I’m SO rAWE-struck I can’t think straight! I will be packing and gearing up for my road trip in the next few days. Busy, I will be, making yummy “road trip” essentials – don’t miss my upcoming post filled with tasty travelin’ treats!
